Fruit Filled Toddler Pancake Muffins

1 c Bisquick mix (or whatever pancake mix you prefer)

1/2 c milk

1 egg

toppings of your choice (I used raspberries and blueberries)

Preheat oven to 350 degrees. Spray muffin tins with cooking spray. Mix the first three ingredients together in a bowl. Pour into muffin tins. I recommend filling almost all the way to the top. I only filled mine about 2/3 of the way and they didn’t puff up like I thought they would, so they are only half muffin bites:). Bake for 20-30 minutes, until golden on top.
