Antipasto Skewers

Description
I love an antipasto plate. All the flavors and textures before your big Italian meal. This snack is an easy and tasty version of antipasto that is a great finger food your tailgating party.
Ingredients
  • 1 package (9 ounces) three cheese tortellini
  • 1 can (6 ounces) pitted whole black olives
  • 1 cup grape tomatoes
  • 1 package (8 ounces) pepper jack cheese
  • 1/2 cup Italian salad dressing
  • Bamboo skewer sticks
Directions/Steps
  1. Make tortellini according to package directions.
  2. Rinse, drain and let cool.
  3. Cut the cheese in 1 inch cubes.
  4. In a bowl combine the olives, tomatoes, tortellini and cheese.
  5. Pour the Italian dressing over and stir to mix well.
  6. Put this in the refrigerator for 60 minutes to “marinate.”
  7. Take skewer stick and place the tomatoes, olives, tortellini and cheese in whatever order you choose.
  8. You can either make short skewers or long skewers depending on what you have to put the finished product in or how many people you have to feed.
