I love an antipasto plate. All the flavors and textures before your big Italian meal. This snack is an easy and tasty version of antipasto that is a great finger food your tailgating party.

- 1 package (9 ounces) three cheese tortellini
- 1 can (6 ounces) pitted whole black olives
- 1 cup grape tomatoes
- 1 package (8 ounces) pepper jack cheese
- 1/2 cup Italian salad dressing
- Bamboo skewer sticks
- Make tortellini according to package directions.
- Rinse, drain and let cool.
- Cut the cheese in 1 inch cubes.
- In a bowl combine the olives, tomatoes, tortellini and cheese.
- Pour the Italian dressing over and stir to mix well.
- Put this in the refrigerator for 60 minutes to “marinate.”
- Take skewer stick and place the tomatoes, olives, tortellini and cheese in whatever order you choose.
- You can either make short skewers or long skewers depending on what you have to put the finished product in or how many people you have to feed.
